Spiced Beef Bowls

bowls, bowls, bowls There’s just something about big, composed bowls, full to the brim with colorful veggies, saucy goodness and hearty protein. It’s definitely my favorite way to put together a meal. This bowl however has a a slightly different anatomy than your basic Buddha bowl. The base is a creamy mixture of browned beef with artichoke hearts and onion. Seasoned with garam masala, Chinese five spice, pink salt and black pepper and cooked down with bone broth and coconut milk.  Piled on top are simply seared vegetables. Asparagus and…

Stuffed Cabbage: Beef, Bacon & Ranch (oh my!)

Officially NINETEEN days until my December Whole30 is done, and I’m feeling good. Feeling strong. Feeling energized. For me Whole30’s are all about the little victories, and getting Primal Kitchen Whole30 compliant ranch in the mail is totes a victory! I immediately started thinking of a recipe for it… other than putting it on all my salads of course 🙂 Although crispy chicken ranch salad will be happening, SOON. Over the weekend I bought the cutest, tiniest little heads of cabbage. Perfect single portion babies. I am such a sucker…

Creamy Beef & Rice Casserole (Whole30!)

It’s getting dark so early I’m often frustrated that I don’t have proper light to photograph and share my dinner meals. The other night I made the most delicious roasted asparagus topped with bacon and pecans. The combination was to die for. It lingered on my palate and had my mind all a buzz with ideas to showcase duo! Enter my son’s school Advent Garden Candle lighting ceremony. The perfect potluck opportunity to take a new dish! So I got my creative juices flowing and the test kitchen was in…

Beefed Up Fried Rice!

Good Meat I made this recipe for Pre Brands Beef. I love them. Not only are they super nice folks, but their grass fed beef is top notch. Seriously. The best. Recently they contracted me to develop a few recipes for them, which I’m thrilled to do. Any chance to play with good meat, I’m all over it. Ok, I’m aware of the suggestive nature of my last sentence. Ha! Would it be highly inappropriate to throw out an “that’s what she said”? I swear, I’m a total feminist…. with…

Jack Pie

Now that the summer months are almost a memory, as the weather begins to cool down it’s time for those hearty, oven recipes! This Jack Pie, lovingly named so after my son is delicious! I shared this recipe when I hosted the Whole30 Instagram forever ago and it’s been a hit. I thought I’d give it it’s proper home on the blog. Why Jack? Well, it’s a Shepherd’s pie type dish with Cuban flavors… So half Irish, half Cuban,  like my son. Bonus this version is a one skillet wonder….

Steak Tartare

Steak tartare is one of those dishes that intimidates people, mostly because the dish is associated with fancy restaurants. Then you Google recipes and see pictures of ground beef with egg yolks on top and you might want to barf. Steak tartar is not just eating raw, ground beef. It’s a combination of condiments with high quality minced meat. And yes, it’s raw meat. Not ground beef, beef tenderloin. Now lets be real, you have to dish out a little mula, get the good stuff. Same with sushi or poke….

Stuffed Sweet Potato Buns

“Anyone who has never made a mistake has never tried anything new.” ― Albert Einstein No truer words Al! I’d been posting pictures on Instagram of beautiful empanadas, made of sweet potato dough! The first time I made them they were perfect, so I knew I’d have to practice again. Second time, too potato-y, third time was darn good. Fourth time, I was all confident, I doubled the recipe. Naturally, I mucked it up. For the life of me that potato would just stick to the parchment paper & I…

AIP Picadillo Empanadas!

Full disclosure, these are really labor intensive. Also, delicious, and the more you make them the easier they are. I adapted the crust recipe from My Heart Beets blog, she uses almond meal in her recipe, which I have substituted with the corresponding amount of coconut flour. Rule of thumb: 1/3 cup coconut flour per cup of almond flour (useful info on AIP!). Growing up, empanadas were a staple, as was picadillo. It was lovely to revisit this Cuban treat in an autoimmune friendly rendition. My first go at these,…

Tequila Beef & Mushrooms (bourguignon inspired!)

I was texting with my aunt today, she is struggling with going full AIP. She was asking me what kind of pastas she can eat because she just made a delicious vegetable marsala sauce and wanted a hot meal. After explaining to her that autoimmune protocol means no grains or eggs, and that pretty much leaves out all store bought pasta-like foods, I suggested my two favorite noodle replacements: sautĂ©ed zoodles & of course, spaghetti squash! So my day goes on, successful Costco trip and all, then suddenly I find…
