Sun Dried Tomato Bison Meatballs & Cauliflower Leek Mash

I love bison! It’s often more affordable than grass fed beef or free range chicken, and Bison is pretty much always sustainably farmed (i.e. free range, grass fed).Lower in fat & cholesterol than chicken & packed with protein, bison makes such a great meat to add to your diet.
Paired with a vegalicious side like leek & cauliflower mash (and guacamole salad!). Boom.

First, let’s make some meatballs:

1 lb ground bison
1 tbsp minced, hydrated sun dried tomato
1 tbsp Italian seasoning (thyme, rosemary, oregano, parsley)
salt + pepper
3 tbsp unsweetened nut milk
1 tbsp almond meal
(for dusting)
1 tbsp almond meal
1 tbsp cassava flour
salt + pepper

In a large bowl, mix ground bison with sun dried tomato, seasoning & nut milk, add in almond meal and mix & mash until fully combined.
Form in to one inch balls and roll around in dusting mix on a flat surface.

Heat a large skillet on medium high, spray with coconut oil. Arrange meatballs in skillet, do not over crowd (work in batches if you need to).
Brown meatballs on all sides (about 2 minutes a side), use tongs to gently turn over. Lower heat to medium low, cover and let them finish cooking on low while you prepare the rest of the meal.

Ok, let’s make some Cauliflower & Leek Mash!

1 large leek stalk
1 head cauliflower
1 cup low sodium chicken stock
2 tbsp grass fed butter
salt, pepper
2 bay leaves

Cut & wash your veggies. Leeks can hide a lot of dirt so pay attention.
Heat your pot on high, melt butter and add leeks. Saute, stirring often until tender. If it begins to brown, lower the heat to medium.

Once your leeks are translucent, aromatic, and soft (about 10 minutes) add in cauliflower.
Stir well and cook for another 5 minutes- add in chicken stock.

Bring to a boil, and lower heat and cover with lid- partially.

Let simmer for 20 minutes. Once the broth is reduced to half and the vegetables are all tender and breaking apart you can either pour mix in blender or blend with immersion blender until (almost) smooth.

It will be HOT, caution if using a immersion blender & remember to remove bay leaves.

Viola! Serve with something delicious & green… enjoy!
