Red creamy coconut chicken & kale ♥️ Great budget meal!

Full fat can of coconut milk (unsweetened)
1 sweet onion
1 bunch kale, stems removed
2 chicken breast (free range)
2 cloves garlic
1/2 lime or lemon
S + P
2 tbsp paprika
2 tbsp tomato paste
Peel & slice onion, mince garlic & de-stem kale.
Slide chicken length wise in 1/4 inch slices.
Heat coconut oil in medium pot on medium-high heat. Add onion to pot and sauté until tender, about 8 minutes. Add in garlic & chicken and cook, stirring until chicken is browned. Add in kale and stir until wilted. Add seasoning & coconut milk. Stir & bring to a boil. Reduce to a simmer (medium-low heat), let liquid reduce a bit.
Stir occasionally, ready to serve in 20 minutes- but can hold well in the stove.
