One Minute Mayo


I love me some fancy aioli. I love my Primal Kitchen Mayo. But sometimes you don’t have either and you need mayo in a pinch, that still tastes good. Here you go.


BASIC VERSION:
3 large egg yolks
1 tsp apple cider vinegar + 1 lemon
dash salt
dash pepper
1/2 cup olive oil (or avocado oil)

Insert immersion blender and watch it emulsify.

VARIATIONS: 

You may omit the lemon, up the vinegar to a tablespoon.

You may add dried herbs or minced garlic, I highly recommend Italian Herb Blend or Herbs de Provence, just a teaspoon!

I like adding a splash of coconut aminos and a spoonful of mustard to to my mayo too! 

 

Note: It won’t be this thick the minute you make it, but after it’s refridferated it will be. I have made this mayo 100 times, with all the different variations. It always turns out.
