Italian Chicken Pumpkin Bake

This dish came to fruition because I needed something fast, hot, filling & that used more of the awesome Pumpkin “marinara” sauce I had made the night before. If you don’t have the sauce already made, then this dish is a little more involved. I suggest you make a batch, separate it in to 3 jars, and freeze two. You can get the recipe from the link above, in my Pumpkin Chili recipe or you can make a quick version of it that would go something like:

In blender puree:
2 cup canned pumpkin
1/2-1 cup chicken stock
1 tbsp onion powder
2 tsp garlic powder
1/4 tsp fennel seeds
1 tsp oregano
1 tsp tumeric
1/2 tsp cinnamon
pinch nutmeg
1 tsp salt
1 tsp black pepper
2 lemons squeezed
2 tsp maple syrup (more to taste)
1/2 cup raspberries (optional)

Blend until smooth. Ready to be cooked with. If adding to a dish, after the fact, I would cook the sauce down first.

Ok, now on the to the main event. You’ll need:

2 free range chicken breasts
1.5 cups raw cashews
3 garlic cloves
5 leaves basil
1 tbsp oregano powder
salt, pepper, olive oil
2 cups Pumpkin marinara

Pre-heat oven to 400F

Once you have your sauce, drizzle a cast iron skillet with olive oil. Arrange 1-2 butterflied chicken breasts on it. Sprinkle with salt, pepper, oregano powder and arrange basil leaves on them. Drizzle with olive oil.

Pop it in the oven. Then quickly pulse the cashews, garlic cloves & pinch of salt in a food processor until crumbly. Open oven & sprinkle dish heavily with cashew cheese.

Bake for 25-30 minutes, until chicken reaches an internal temperature of 167F. The chicken is butterflied so it will cook very fast, but stay juicy because is swimming in sauce, which will cook down, get thick and the cashews cheese creates a sort of crust over the whole thing. Yum!
