Homemade Mayonnaise & it’s variations


Basic Mayo

3 large egg yolks
1 tsp mustard
3 tsp apple cider vinegar
Salt, pepper
1 cup olive oil or avocado oil

In food processor combine vinegar, mustard, salt and pepper. When smooth, add yolks in. Then in a needle thin drizzle add oil, in constant flow until mixture is thick. Mix in lemon with spatula.

Roasted Garlic Mayo

In a sheet pan roast 6 cloves of garlic tossed in olive oil. Roast at 300F until tender. Let cool.
3 large egg yolks
2 tsp mustard
1 tsp lemon
2 tsp apple cider vinegar
Salt, pepper
1 cup olive oil or avocado oil

In food processor combine vinegar, mustard, salt and pepper. When smooth, add yolks in. Then in a needle thin drizzle add oil, in constant flow until mixture is thick.

Spicy mayo

3 large egg yolks
1 tsp mustard
2 tsp lemon
2-4 tsp sriracha or cayenne powder
Salt, pepper
1 cup olive oil or avocado oil

In food processor combine lemon, mustard, sriracha, salt and pepper. When smooth, add yolks in. Then in a needle thin drizzle add oil, in constant flow until mixture is thick.

Herb Mayo

3 large egg yolks
1 tsp mustard
3 tsp apple cider vinegar
Salt, pepper
1 cup olive oil or avocado oil
3 tbsp minced herbs (rosemary, thyme, oregano)
1 tsp honey

In food processor combine lemon, vinegar, mustard, honey & herbs, salt and pepper. When smooth and in yolks. Then in a needle thin drizzle, add oil in constant flow until mixture is thick.
