My mother’s restaurant, Green Gables Cafe, occasionally serves this raw vegan gazpacho. Gazpacho is a traditional Spanish soup made of raw tomato & served cold. This tomato-less rendition with cashews is a perfect paleo, summer soup!
When I worked in the kitchen there I would make it all the time. It’s a fantastic & fresh recipe- these sweltering summer days have me craving some!
When I made it at the cafe, worked with large measurements because I was making a commercial amount, granted I still made it all in a Vitamix
because those blenders are the best, truly a work horse!
What’s in it:
Peeled & seeded cucumber
Salt + Pepper
If I were making two servings I would use:
2 cucumbers (peeled & seeded), 1 bunch watercress (just leaves), 1 stalk scallions, 1 cup pre-soaked cashews, 2 cup green grapes, 4 garlic cloves, 1 cup water and salt & pepper to taste, 1/4 cup olive oil.
You blend it all in the food processor. Mix water last, use it to keep things moving. It should be thick enough to coat a spoon.
The great thing about this is that you can easily tweak it to your liking, spicier or tangy, fresher, sweeter etc.
Working with my mother & sister was intense. We’re a family of high expectations & I am also the younger sister. So many heated moments, especually under the stress of a busy restaurant. But in the end, I think we worked well together- we understood what needed to be done & the burder of managing the staff and being responsible for things was distributed between all three. Since then I married a Sailor and moved away & my sister’s husbands work also moved her family away. My mom’s a pro- the Cafe has been growing and growing for the last eight years.
