AIP breakfast gluten free greens healthy fats 

Green Breakfast Tacos

Inspired by @paleomunchies green spinach wrap, I made green AIP breakfast tacos! I was pretty impressed with the consistency. More like a soft taco or even crepe like, I filled them with lightly pickled cabbage (acv + sea salt), thyme grilled chicken & avocado! The tortillas; were made by:

Blending in a high powered blender…
a yellow plantain
fist full of spinach
tsp baking soda
tbsp coconut vinegar
2 cloves garlic
1/4 cup water
pinch of salt

…in the blender until smooth. Then cooking the batter like you would very thin pancakes. A little involved for a morning meal, but it’s Saturday! Go crazy morning meal, but it’s Saturday! Go crazy #teambreakfast

I made these again today, and but this a green plantain. I added a little more water & 1/2 cup cooked yuca root too. The batter was thicker and I had to smooth it out in the skillet, but then continued on like a pancake & they were great! A little more on the savory side, and with a stretchier consistency. These are so easy, and to flexible. I’m definitely a fan.
