Fennel, Green Onion & Pineapple Roasted Chicken


Spatchcock pastured chicken with fennel, pineapple & green onion (from my garden)! I minced it all up, mixed it up with coconut oil, black pepper & sea salt and stuffed in under the skin and all around. Cooking at 400F for 30min.  The bones, along with the gizzards & vertebrae I removed will go in to the slow cooker for bond broth later ♥️
