When I first began my health journey I always imagined I would one day be “cured” and then I could go back to my old life. I imaged late nights, pizza, wine (too much wine). I day dreamed of bar hopping New York speakeasies and enjoying all the craft cocktails. I bidded my time until the day I could have my favorite ice cream and sugary treats again.
I never, ever thought that I would be okay, neigh, FABULOUS without any of it. I don’t need it, the drinks, or late night pizza. I don’t want the bowl of ice cream. What I have learned in the last two years of my grain free, sugar free, clean eating mission, is that I am worth it. One can never be cured of chronic illness. One can be in remission, and after two years of healing my body, I am there. The one thing I am cured of is the disregard in which I treated myself for so long. I would never put my body through the ringer the way I used to. Eating the way I do, the choices I make when I go out, when I shop, when I have folks over… they all exude my passion for healthy living.
So now what? Do I become a hermit? Absolutely not! Just because I’m not boozing away, or burning the midnight oil doesn’t mean I don’t love to entertain. Hosting parties is one of my favorite things to do. I love to talk, a lot. I love to feed a crowd. I love to decorate my home. Just this past weekend, we hosted my son’s 4th birthday! Everything I served was gluten free or paleo. Nothing had sugar in it. Not even the cake! All the beverages were squeaky clean too! A cooler full of healthful choices but best of all, a big, ice cold pitcher of these Mocktail Mules. Cool and refreshing. Perfect for sitting in the shade while the kiddos played on the slip and slide all afternoon.

Unfortunately my hostess duties has be running around so much I could not get a decent picture of my lovely spread. But my son LOVED this beverage so much, I made it for him again today! Bonus, it has veggies! Yup! Plenty of fresh cucumber and ginger which he drank down willingly. Win! We enjoyed another pitcher of these Zevia Mules with lunch and it was the perfect refreshing drink after meal prepping all morning!
Zevia became a staple in my home when I asked my husband to wean himself off of his soda habit. Yes, my husband was a hardcore soda drinker. Especially with dinner and to take to lunch for work. As our son got older I urged him to create better habits. Children will do what you do, not what you say. I’m sorry, liquid candy is just not okay for my baby, or any child if you ask me. Other sugar free sodas are filled with scary ingredients. Zevia is non-gmo, gluten free, vegan and sweetened with a little 100% stevia leaf extract!
Stevia is a plant, a shrub related to the sunflower. The little leaves are 200x SWEETER than cane sugar but has no caloric value, nor does it raise blood sugar. Perfect for my low carbers and keto folks!
While Jack sticks to water most days, I can feel great about letting him indulge in a little Zevia with his Daddy or me every now and then. Best of all, it’s been months since my husband has had his old nasty sodas!
If you’re not aware, Moscow Mules are craft cocktails made with ginger beer, gin or vodka and lemon. Cucumber juice or slices are often added because it’s delicious with this combination! I won’t judge you if you want to spike these mocktails. Fresh cucumber is seeded and blended with minced ginger, lemon juice and Zevia Ginger Ale to create a fresh and tangy bevy that is perfect for happy hour, pool side or just lunch with your kiddo on a Monday 🙂
- 1 large cucumber
- 1 tbsp minced fresh ginger
- 1 lemon
- 2 can Zevia Ginger Ale
- 2 cups ice
- Peel your cucumber then halve leghthwise. Use a spoon to scoop out the seeds.
- Cut it up and add it to your blender.
- Next add in the ginger and juice the lemon into the blender too.
- Add in the ice and blend until crushed.
- Add in the Zevia Ginger Ale, blend on low, bringing the speed up to high until it's completely smooth.
- Pour through a fine mesh sieve into a pitcher.
- Garnish with fresh lemon and ginger.
