Tempura Zucchini Fries (Paleo, Whole30, Keto)

Real talk… it’s late… I’ve had a long day and I don’t have much to say right now. I truly just want to shower and Netflix away the few hours I have left of my evening. So I’m going to cheat and copy and paste what I wrote about these when I posted on Instagram the other day. It was a great description anyway 😉 Baked Tempura Zucchini Fries! Strips of zucchini studded with crunchy clusters of ground pili nuts. If you’ve never heard of pili nuts, pronounced (peel-y), they…

Raw Chocolate Coconut Macaroons

These little vegan-ish treats have been a staple at my mother’s health food restaurant going on eight years. They’re the perfect treat. Bite size. No bake. Healthy. Delicious. Pretty much compiled of a few super foods, these macaroons are nutrient dense too. They melt in your mouth. They’re rich. Just the right, satisfying size. Talk about the right way to indulge. Today I’ve made them using Truvia Nectar and they turned out better than ever. So amazing. Truvia Nectar is a seamless substitute for honey, with half the calories. Win-win!…

Pesto-Churri Super Green Sauce

We often lump herbs and spices into a category of tasty things to make our food flavorful. These whole food seasonings are FOOD! Herbs pack lots of great nutrition. Did you know that Mint, Basil and Cilantro score the highest on the ANDI scale. Ok, I had to google that, so an ANDI score is a number given to whole food ingredients to rate how many nutrients per calorie they have. These babies have the most! Talk about PACKED with goodness. So I love this sauce because it’s tangy like chimichurri…

Chai Poached Apples with Almond Butter

I love poached pears and filed them in a category of fancy desserts. After all anything you cook in wine is kinda fancy right? Well lately I’ve been really into unsweetened treats, or snacks. Okay let’s just call them snacks. One day I just had a delicious sounding combination of ingredients and I wasn’t sure how I was going to combine them all…. and then inspiration struck. Chai tea, apples, almond butter. Chai poached apples, stuffed with almond butter. Yup! Bonus, you have delicious chai tea brewed when you’re done….

Nightshade Free Tamarind BBQ Sauce

Marinara and a good barbecue sauce. I miss those guys. I omitted nightshades from my diet a little over a year ago. It wasn’t a decision that came lightly.  Some of my favorite vegetables are nightshades! I was the queen of roasted eggplant, big heirloom tomato BLT’s and sweet pepper stir -fry.  So why did I give up my beloved vegetables? Well, they are trigger foods for me. When I read about the autoimmune protocol I immediately knew those would have to go. Even before I knew about leaky gut,…

Paleo Yuca Flatbread

So Yuca bread (Casabe) has actually been around for a long time, Dominicans, Brazilians & other Latin cultures have been using yuca flour & yuca root to bake with for ages! Although their recipes were far from Paleo- yuca’s natural viscosity makes it ideal for AIP baking. This flatbread was a take on Predominantly Paleo’s pizza crust. I simplified the recipe & made it with less fat & without coconut flour- it’s practically Whole30, if you ask me! The result: light, flaky bread, almost like puff pastry. It gave me…
