Lemon Curd + Dark Chocolate Cake (Paleo, Gluten Free, Low Glycemic Treat)

I am so thrilled to be partnering with Bob’s Red Mill  this Spring!  It’s a wonderful time of the year for delicious, airy confections. Not to mention my dear boy turns four. When the folks at Bob’s said they were sending me THREE of their great baking flours I was over the moon!  They sent Unbleached White All Purpose Flour, 1 to 1 Gluten Free Baking Flour and the Paleo Baking Flour. I have used the 1 to 1 Gluten Free Blend before and I will tell you the results I…

Banana Bunny Breakfast Muffins

At my mother’s cafe in Coral Gables, Fl, Green Gables Cafe, they have been serving Morning Glory Muffins for as long as I can remember. Hearty muffins made with whole wheat flour, carrot, pineapple and brown sugar. They are amazing and decadent. Not only do I miss them because I live half way across the world, but because there is no way I would eat one now. Indulging in glutinous treats is just not an option for me. Yet, there is something about dunking a muffin in to a hot…

AIP Lemon Cookies

I have a sweet tooth. I always have. Despite the fact that I have not had refined sugar in over a year & that I often go weeks without sweets, the fact is, I like them and I love to bake. I don’t think I will ever separate food from emotions, no matter how many Whole30’s I do. I don’t even want to. Food is a passion. Food equates health, nurturing & creativity to me, and I love it. Last night, after my internal tug of war was over, I…

Basil Chicken Meatballs with Caramelized Lemon & Grapes

This Whole30 has been a little different because I’m doing it within the confines of the already strict Autoimmune Protocol, with only eggs reintroduced so far. I have really had to dig deep to keep things interesting, and curb my cravings… especially since I made those AIP empanadas. No shame in my game. I have totally had empanada dreams. Tonight’s dinner was so refreshing, fun & really just so visually appealing- it cheered me up and breathed new life in to week one of my January Whole30. Best part of…

AIP Picadillo Empanadas!

Full disclosure, these are really labor intensive. Also, delicious, and the more you make them the easier they are. I adapted the crust recipe from My Heart Beets blog, she uses almond meal in her recipe, which I have substituted with the corresponding amount of coconut flour. Rule of thumb: 1/3 cup coconut flour per cup of almond flour (useful info on AIP!). Growing up, empanadas were a staple, as was picadillo. It was lovely to revisit this Cuban treat in an autoimmune friendly rendition. My first go at these,…

Mushroom & Spinach Chicken Patties

As of late I’ve been missing foods like falafel, baba ganoush, tabouli… see a theme here? All the delicious Mediterranean treats that are grain, legume or nightshade based. I miss the mix of flavors & textures, the zest of lemon- but most of all how satisfying they are. With this thought floating around my consciousness I labored in the kitchen doing meal prep & cooking for a new AIP client. The result was a array of equally clean, complex & fresh meals! These patties among them. Extraordinarily simple to make,…

Tequila Beef & Mushrooms (bourguignon inspired!)

I was texting with my aunt today, she is struggling with going full AIP. She was asking me what kind of pastas she can eat because she just made a delicious vegetable marsala sauce and wanted a hot meal. After explaining to her that autoimmune protocol means no grains or eggs, and that pretty much leaves out all store bought pasta-like foods, I suggested my two favorite noodle replacements: sautéed zoodles & of course, spaghetti squash! So my day goes on, successful Costco trip and all, then suddenly I find…

Nut-Free Paleo Chicken Nuggets

Eating with a toddler on AIP Often times on my Autoimmune Paleo journey I find that I can’t share meals with my toddler. In a perfect world my kiddo would eat all my protein and veggie packed meals, but that just isn’t the case. Recipes like these make my day. Fun, creative, satisfying & healthy for both of us! We had just come back from a hike & I wanted little man to get his protein in, but eggs and beef were out since he’s had plenty the last few…

Don’t tell them it’s Paleo, Apple Pie

After Thanksgiving the neighbors decided to have a leftover potluck. Only thing was, I didn’t really have leftovers. I wanted to share some of the awesome pumpkin pie I made, but I had eaten the last piece (don’t judge). Really though, I wanted another stab at the crust, I felt adding a little more water would help with it not cracking. When I have an idea to better a recipe it will drive me insane until I can do it again. Luckily this “friendsgiving” along with some friends from the…
