If you like a little bitter bite to your food- you’ll love this turkey burger. It’s a fantastic, healthy, meal prep option and super duper sustainable. I love finding ways to use my carrot & radish greens. Something about using the whole vegetable makes me feel better, and I like buying my carrot bunches with the greens, I like my carrots just plucked from the earth. Speaking of… I’m really excited, for my own baby carrots are growing and growing and soon I’ll have my own to pick.
I feel really strongly about how super markets these days like to clean, shine and package food. It’s so far removed from where it comes from- it almost white washes away all the work, the struggle it took to get there. Farming is hard work, it takes physical labor. Someone picked those vegetables, someone had to nurture, feed and then slaughter that animal. It’s sounds terrible, but it’s the truth & it’s okay. It’s the food chain, the circle of life. If we are aware and remember that, each time we buy food, prepare it… maybe we would all be a little more conscious of where we buy from, what we eat etc.

Hey! Here’s a great little turkey burger recipe for you:
1LB Organic ground turkey
½ cup finely chopped carrot greens
1 tbsp lemon juice
1 small sweet onion, diced
1 tsp mustard powder
2 small carrots, diced in 1/4 inch cubes
1 pastured egg, scrambled
¼ cup almond meal
SALT & PEPPER
1 tsp cumin
1 tsp oregano
Pre heat oven to 400F
Mix meat, almond and spices, add in vegetables and mix well, lastly add in egg. Mush and mix until well combined.
Separate in to 4, 4oz patties.
Spray sheet pan with coconut oil, place patties on sheet pan and bake for 20-30min.
You can enjoy right away or store in fridge up to 5 days. These are great Whole30 meal prep!
