Arugula Cashew Pesto



AIP Arugula Pesto!  And I measured it out for you all this time!  

In you food processor: 
3 cup loose arugula 
1/2 cup sweet basil leaves (whole) 
4 tbsp olive oil  
5 tbsp lemon juice  
1/2 tbsp coarse sea salt  
1 tsp black pepper 
1/2 raw whole cashews  
4 whole garlic cloves 
1/2 small haas avocado (optional) 

I didn't have ripe avocado, but it smoothes out the flavor. The raw garlic & arugula make this pesto a little spicy! It stored very nicely in an old @tinstarfoods jar :)
